From even 90 years old vines of Merlot we select the grapes for this special cuvee which ferments with the skins for 30 days in open oak vat and ages in barrels up to 5 years on the fine lees.
Vineyard: Sant’Andrea and Lucinico on gravel and clay
Fermentation of grape musts: 30 days with the skins in oak vat
Aging: big slavonian oak barrels or smaller french oak tonneaux and barriques for 5 years
Bottling: by free fall with no filtration and no additives
