A selection of two different Sauvignon Blanc biotypes from the Giasbana (Jazbine) vineyard in the municipality of San Floriano del Collio, a southeast-facing vineyard on clay and ponka (marl). Harvested at full ripeness, the grapes are directly pressed from whole bunches and aged in large Slavonian oak barrels. Bottled unfiltered.
Vineyards: Giasbana, 50-100m above sea level; clay and Eocene flysch, organic farming, grass cover, single short Guyot pruning, yield 40q/ha, full sun, south-east exposure
Grapes: Sauvignon blanc.
Vinification: Direct pressing of whole bunches
Fermentation: Spontaneous in 10 and 20hl Slavonian oak barrels (HR)
Maturation: In large oak barrels for 24 months on its own fine lees
Bottling: Without filtration, by gravity
Tasting notes: A clear, golden straw yellow, with fresh notes of pear, orange, and jasmine, complemented by an almondy undertone. The nose is characterized by a pleasant smoothness and a consistent salinity. Light nuances of mint and eucalyptus are also evident
